I like cornbread that you have to bite and chew off like beef jerky :) Ok, maybe not that heavy, but it should be able to live under a pile of chili and not turn to mush until I mash it with my fork! There are a few good stone ground cornbread mixes available around here with the leveners already mixed in so you just need to add some shortening and liquid and toss it in the oven. But, it's such a regional thing! It's hard to find sweet cornbread in some places, around here it's hard to avoid!
