Corn Bread

I volunteered to make corn bread for a class party on Monday (which I can't make as I have my work pot luck the same day - I'm making pudding pie for that!).

Anyone have a good tried and true recipie that 4/5 year olds should like?

In a pinch "Jiffy" cornbread mix (if you can find it in your stores) is easy. It's a very fine grain mix and it bakes up fluffy, it's also on the sweet side so it's like sweet corn cake vs a really dense, chewy cornbread.

(Personally, I can't stand it, I don't like sweet cornbread, but it's very kid friendly!)

I like cakey cornbread, but Trey doesn't, so I make non-sweet. My kids prefer the sweet.

I like cornbread that you have to bite and chew off like beef jerky :) Ok, maybe not that heavy, but it should be able to live under a pile of chili and not turn to mush until I mash it with my fork! There are a few good stone ground cornbread mixes available around here with the leveners already mixed in so you just need to add some shortening and liquid and toss it in the oven. But, it's such a regional thing! It's hard to find sweet cornbread in some places, around here it's hard to avoid!
